Ingredients:

1 Tbsp chia seeds
1/3 C warm water
1/2 C sour cream or natural yoghurt
1 C plain flour
1/2 C wholemeal plain flour
1/3 C mixed pepitas and sunflower seeds
3 Tsp baking powder
1/2 C rice malt syrup
1/2 C butter
1 Tsp vanilla extract
1 C chopped strawberries

Method:

Preheat oven to 180°C and grease and line a mini loaf pan or line muffin pans with cases.

Soak chia in warm water for 15 mins, stirring occasionally. Mix in sour cream.

Combine dry ingredients in large bowl.

Melt butter and syrup together – I usually use a Pyrex jug in microwave, and measure ingredients on the side. Stir in vanilla.

Mix sour cream mixture into dry ingredients. Add the syrup mixture and stir until just combined. Stir through strawberries.

Divide into 16 small muffins or 9 or so mini loaves and bake for approx 25 mins.
