My toddler is crazy about rice. It’s a great way to use up any left over boiled rice and it’s a good addition to those quick midweek dinners.
Add some cuteness to your meal with a fish shaped boiled egg.
1 cup basmati rice
1 spring onion, chopped
3 cloves of garlic, minced
1 carrot, diced
1/2 cup peas, blanched
2 corn cobs, cooked, kernels removed
2 tablespoons salt reduced soy sauce
4 tablespoons sweet chilli sauce
1 tablespoon peanut oil
2 eggs made as an omelette and chopped, optional
Begin by sautéing the onion and garlic in peanut oil. Add the carrot, corn & peas and cook for a further 2-3 mins.
Add the soy & sweet chilli sauces. Take it off the heat & add the rice, then toss.
Top with chopped omelette &/or boiled egg.
I also added some pre cooked chicken to this rice for extra protein.
Served in a bobo&boo bamboo bowl & spoon.
