Ingredients (Serves 4)

🥄 3 cups cooked rice (we cook ours in chicken stock for extra flavour)
🍗 1 cooked chicken breast, shredded
🥕 1 carrot, grated
🧅 3 shallots, chopped
🍄 1 large mushroom, finely chopped
🌱 ½ cup cooked peas
🥬 A few large spinach leaves, chopped
🧀 1 ⅓ cups grated cheese
🥚 3 eggs
🧂 Parmesan cheese for topping

Method

1️⃣ Preheat oven to 200°C and lightly spray a muffin tray with oil.
2️⃣ In a large bowl, mix all the ingredients together until well combined.
3️⃣ Spoon the mixture into the muffin tray, pressing it down slightly so it holds together.
4️⃣ Sprinkle a little parmesan cheese on top for that extra crispy, cheesy goodness.
5️⃣ Bake for 15 minutes or until golden brown on top.
