
Chicken, Butternut Squash And Quinoa.
Suitable from 7 months. Suitable for freezing.
Ingredients:
- 2 tsp olive oil
- 1/2 red onion, chopped
- 175g butternut squash, peeled and diced
- 1 Apple, peeled and diced
- 80g carrot, peeled and diced
- 250g chicken thigh, chopped
- 1 tbsp tomato purée
- 100 ml of chicken stock
- 100g quinoa.
Method:
- Heat the oil in a pan. Add the onion, squash, apple and carrot. Fry for a few minutes.
- Add the chicken and brown with the vegetables. Add the tomato purée and the stock.
- Cover and bring up to the boil. Simmer for 30 minutes and stir in the cooked quinoa.
