Try These Purple Carrot Muffins!

Snack time just got a whole lot sweeter and healthier with the latest creation from @my_foodie_baby -Purple Carrot Cupcakes! 

We know it can be a challenge to get those extra veggies into our little ones' diets, but with this recipe, it's not only easy but delicious too. Perfect for toddlers and kids, these cupcakes are a fun way to incorporate more nutrients into their snacks. And the best part? The whole family will enjoy them. And don’t forget your bamboo plate to serve them up on!

 

Purple Carrot Muffins

 

YOU NEED:
 
Light muscovado sugar - 150g
Self-raising flour - 200g
Bicarbonate of soda - 1tsp
Mixed spice - 1 tsp
Sultanas - 100g
Eggs - 2
Butter - 75g melted
Carrots - 200g grated
 
For the icing:
 
Butter - 100g softened
Cream cheese - 300g
Icing sugar - 100g sifted
Vanilla extract - 1 tsp
Purple food colour - 1 tsp
 
MAKE IT:
 
  1. Heat the oven to 180C/160C fan/gas 4 and line a 12-hole muffin tin with cases.
  2. Mix the sugar, flours, bicarbonate of soda, mixed spice and sultanas.
  3. Whisk the eggs and softened butter then stir into the dry ingredients with the grated carrot.
  4. Divide the mixture between cases and bake for 20-22 mins until a skewer poked in comes out clean.
  5. Cool on a wire rack before icing.
  6. For the icing, beat the butter until really soft, then beat in the soft cheese, icing sugar, food colour and vanilla.
