Holiday Pancake Recipe: Fluffy Reindeer Pancakes

A simple Christmas-y brekkie for my littles to mark the end of gymnastics filming for her and Sunday School camp for him. Thankfully we have a nice chill week coming up before two more weeks of camps, camps, camps….

This is my favorite pancake recipe ever which we’ve used for years now and still love. (Also doesn’t it fit perfectly in our divided plates?)

Ingredients (makes 6 pancakes):

- 1 cup all purpose flour
- 2 tbsp sugar 
- 2 tsp baking powder
- 1/8 tsp baking soda
- 1/4 tsp salt
- 1 cup milk
- 2 tbsp (30g) butter, melted
- 1 tsp vanilla essence 
- 1 egg

Directions: 

  1. Mix together all the dry ingredients in a mixing bowl. 
  2. Mix the milk, butter, vanilla and egg in a smaller bowl. Pour the wet mixture into the dry mixture and mix well. 
  3. Let batter rest for 5-10 minutes. 
  4. Heat up a bit of oil in a non-stick frying pan on medium heat. Scoop about 1/4 cup of batter into the heated pan. 
  5. Cook till bubbles start to appear on the top of the pancake (around 35-40 seconds). Get your spatula under the pancake and flip it over. Cook till the pancake is a nice golden brown on both sides (another 35-40 seconds), then remove from the pan. Repeat with remaining batter.
  6. Serve with maple syrup, honey, jam, berries, banana, granola... Whatever suits you!
